Fifteen Bean Soup

Walking through the grocery store the other day, I saw a bag of “15 Bean Soup” Of course, I had to get it.

Made it up today.

Ingredients:

1 pound bag of 15 bean soup mix — ( The bag claims it has 15 of the following: Northern, Pinto, Large Lima, Yelloweye Bean, Garbanzo, Baby Lima, Green Split Pea, Kidney, Cranberry Bean, Small White, Pink Bean, Small Red, Yellow Split Pea, Lentil, Navy, White Kidney, Black Bean)

2 Pork neck pieces

2 stalks celery

¼ red onion

½ bell pepper

Packet seasoning mix (included with the beans.)

Procedure:

Soak the beans overnight, in the morning, drain and rinse off, place in the crock pot and fill ¾ with fresh water.

Slice the bell pepper longwise, chop the celery into ½ inch slices, cut the onion into bigish chunks. Add to the mix.

Put the pork neck pieces in, hoping fervently all this won’t overburden the crock pot.

Cook on high until everything is done. (About four hours.) Add the spice packet about an hour before you expect it to be ready.

With the pork neck, you can either remove it and worry the meat off the bones, or just leave it in until the soup is all gone, and then gnaw on the remainder.
